Banana Pancakes

1/2 cup very well mashed ripe banana
2 eggs whites

Method: Mix banana and egg in a medium bowl. Heat a skillet to medium, and spray with nonstick spray. Scoop about 1/4 cup of the batter onto the skillet. Cook until edges are dry- the pancake will be thin. Flip and cook the other side briefly. Repeat with the remaining batter. You should be able to get 4 or 5 thin pancakes.

Vegan Sloppy Joe

Lentils, soaked overnight, cooked set aside

1 Tbsp olive oil

1 medium onion, diced

1 green bell pepper, diced

2 tsp chili powder

½ tsp garlic powder

1½ c water

tomato sauce

1 Tbsp soy sauce

salt and pepper to taste

Lettuce and tomato

soft sandwich buns

Method: In a medium saucepan, saute pepper and onion in oil until onion is translucent.Stir in chili powder, garlic. Add water, tomato sauce, and soy sauce; stir well. Fold in lentils, heat well. Serve hot on toasted sandwich buns, with lettuce and tomatoes
