Ingredients:
½ pound smoked sausage or Kielbasa diced or cut into "coins" You can use up to 1 pound if you like the sausage taste
12 ounces Dead Guy Ale you can use another brand of dark ale but do not use an IPA
2 potatoes peeled and diced (I use organic)
½ pound of sharp shredded cheese (you can add up too 4 ounces more)
1 ½ to 2 ½ cups water, it all depends on if you want thick soup or a thinner broth
1 tsp salt
2 green onions diced
1 cup half-and-half
Cayenne pepper to taste
Black pepper to taste
Preparation:
In a large saucepan boil potatoes in water until they start to get tender
Add onions, salt, sausage, black pepper, red pepper, and beer.
Simmer until potatoes are completely tender.
Add half-and-half and cheese and simmer until cheese melts.
Makes about 4 servings
