Cannon's Crustless Coconut Pie
-1 cup shredded or flaked coconut
-3/4 cup sugar
-1/2 cup baking mix (Bisquick)
-1/4 cup butter, softened
-2 cups milk
-1 tsp coconut flavoring
-4 eggs
-Preheat oven to 350 degrees. Spray 9 inch pie plate with nonstick spray. In medium bowl stir all ingredients until blended.
-Pour into pie plate. Bake 50-55 minutes until golden brown and knife inserted in the center comes out clean.
