Pork Medallions with coleslaw
Packaged marinated pork tenderloin (mustard flavor). Cut into medallions and seared in hot skillet.
Served with Kelly's coleslaw:
Kelly's Coleslaw
1 head of cabbage, cored and chopped or cut julienne (or one bag of prepared coleslaw mix)
1 grated onion
1½ tablespoon cooking oil
¾ cup or more mayo
2 rounded teaspoons mustard
Scant ½ cup sugar
3 tablespoons spoons red wine vinegar
½ teaspoon celery seed
1/8 teaspoon salt
Oil the chopped cabbage first
Mix mayo and mustard
Add other ingredients
Stir
Let set for a while before serving
