Sara Highland won third place at the Georgia National Fair, and today she showed us her baking skills in the kitchen. Watch her make a dairy and gluten free chocloate cake!

Sara's Marvelicious Chocolate Cake
(Gluten & Dairy Free recipe)
*organic ingredients

2 c. sugar *
1-3/4 c. Gluten-free all purpose baking flour
3/4 tsp xanthan gum
3/4 c cocoa
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp sea salt
2 eggs *
1 c. Vanilla Almond milk
1/2 c. vegetable oil
2 tsp vanilla extract *
1 c boiling water

Grease and flour two 9 in round cake pans.
Combine dry ingredients in large bowl. Add eggs, milk, oil, and vanilla. Mix well. Stir in boiling water. Pour into pans
Bake at 350° for 30-35 min. Let cool completely before frosting.

Frosting

1/2 c. vegetable shortening *
Pinch of sea salt
2/3 c. cocoa
3 c. powdered sugar *
1/3 c. vanilla almond milk
1 tsp vanilla extract *

Melt shortening. Add salt and cocoa and mix well. Alternately add powdered sugar and almond milk. Blend until frosting reaches spreading consistency. Add more milk, if needed. Stir in vanilla. Try not to eat too much before you get it on the cake!
