Yummy Berry Blue Pie

BASIC PIE CRUST RECIPE FOR BAKED 9" ONE CRUST PIE

1 CUP PLUS 2 TBL FLOUR

1/2 TSP SALT

1/3 CUP CANOLA OR COOKING OIL

2 - 3 TBL COLD WATER

MIX FLOUR & SALT TOGETHER AND ADD OIL - MIX TILL CONSISTENCY OF SMALL PEAS & THEN ADD COLD WATER 1TBL AT A TIME TILL FORMS A BALL - REFRIGERATE ETC.

BAKE PIE CRUST 12 - 15 MINUTES AT 475 TILL GOLDEN.

I USE 1 1/2 TIMES FLOUR, SALT & OIL AND SPRITE INSTEAD OF WATER TILL BALL FORMS

REFRIGERATE DOUGH 20 - 30 MINUTES AND ROLL OUT FORMNG CIRCLE ABOUT INCH LARGER THAN PIE PLATE ETC. PLACE PIE PLATE CENTERED ON DOUGH AND GENTLY FLIP OVER - FIT PIE CRUST INTO PLATE AND CRIMP EDGES.

Crazy Berry Blue Pie

1/4 cup cold water

1 envelope unflavored gelatin

1 can eagle brand condensed milk

1/3 cup lemon juice

1 cup sour cream

2 1/2 cups blueberry pie filling

Put water and gelatin in small sauce pan, place over direct heat, and stir until dissolved, or mixture is clear.

In medium sized bowl combine condensed milk and lemon juice, stir in gelatin mixture, fold in sour cream , mix in 1 1/4 cups of pie filling.

Turn into crust- refrigerate 2-3 hours, then garnish pie top with remaining pie filling and dust with cinnamon.
