CRAZY CHOCOLATE CAKE
Into an ungreased 8X8 sift together:
1-1/2 cups flour
1 cup sugar
3 TBL cocoa (1 hersey's)
1 tsp salt
1 tsp baking soda
1 tsp baking powder ( if you keep powder in freezer, it lasts longer)
Make 3 holes in the dry ingredients; in put 1 tsp vanilla (extract, not flavoring), in another put 1 tbl vinegar and in another put 5 tbl melted shortening OR vegetable oil.
Over all put 1 cup coffee (cold) OR 1 cup warm water. Mix well. Use a fork flat in pan to mix and get in all the corners - mixing well is key to this recipe!
Bake in 375 oven for 20-25 minutes. Time may vary according to individual ovens. Test that cake is done when using cake tester or toothpick stuck in middle if it comes out clean.
ICING FOR CRAZY CHOCOLATE CAKE
1 box confectioners sugar
1 stick real butter, softened
1 tsp vanilla
½ and ½ - drip into bowl until consistency is correct to frost cake
Place softened butter into medium mixing bowl , add sugar on top.
Gently mix together with wooden spoon and then add the vanilla.
With hand mixer on slow, at first, mix all together and drip in ½ and ½ as needed to bring mixture to spreading consistency. Enjoy!
